Made with locally milled flour (shoutout to Dry Storage in Boulder), this loaf is full of flavor. The rye flour (Ryman Rye, grown in Colorado) gives it such a wonderful chewy texture and a more manageable crust compared to traditional sourdough. The remaining wheat flour is high extraction Yecora Rojo, halfway between a white flour and whole wheat flour that provides even more complexity. Topped with sesame seeds that develop such a nice toasted flavor from baking, this loaf is a new favorite.
